Chocolate Espresso Fig Cake
I’ve reached the point in my life where I don’t have the everyday time or energy to bake a 3-layer cake and assemble an elaborate buttercream tower. If I’m going to bake a cake, it needs to come together in under a couple hours just in time for an impromptu gathering. Single layer cakes with simple toppings are more approachable, better portion sized, and easier to store in the fridge!
This recipe offers a moist sponge with a rich chocolate rye profile with hints of fig jam. The chocolate is balanced by a light mascarpone whipped cream and an array of fresh figs. The chocolate espresso note is pronounced and comforting without being too sweet.
